Tomato Soup, (recipe below) my version of a family recipe, super easy to make and so flavorful.
If you can't find heirloom tomatoes since it's winter I'd say get some nice cans of tomatoes. It makes a huge difference in flavor when you are using local and in season produce. Such a huge advocate for this movement, it's cheaper, it taste better, and you get all the health benefits. Stay well my peeps 😘
3 cups of puree heirloom tomatoes
1 cup of coconut cream
1 cup of water
4 tsp of apple cider vinegar
A cup of white onions
3 garlic cloves
4-5 tbsp of Tamari soy sauce
1 tbsp of oregano
3-5 fresh sage leaves
7-10 basil leaves
2-3 cups of Broccoli
3 medium size Eggplants
2 cups of Spiralized zucchini
2 cups of Mushrooms
1 sweet red pepper
2-3 tbsp of coconut oil
1)Using a high speed blender, puree tomatoes, water, onions, soy sauce, garlic, apple cider vinegar, and coconut cream.
2)Add oil to sauce pan, then add your puree in.
3)Cook for 5-8 minutes. (Medium heat) (or until simmered)
4)Add your eggplant and broccoli. (Cook for 5-8 minutes) Cook until desired consistency.
5)Add your mushrooms, fresh basil, and sage. Turn off heat. Mix thoroughly. Let it cool for 5 more minutes. or what ever order you'd like.
6)Add your spiralized zucchini and it's ready to serve. Topped with red pepper and more basil. Enjoy. #hackingsnacking #contest #feedfeed
