My body fat % has been correlating with how many friend Plantains I've been eating lately. I'm currently away from my supplier so I'll probably be losing a couple pounds these next couple of weeks.

Let me attempt to make this post informative now. Your body weight will increase over a week/month when the average daily caloric balance is at a surplus over a week/month. It won't depend on the individual foods you ate or didn't eat. Your overall health, aside from your body composition, most likely WILL be affected by the micronutrients you consume or neglect to consume over the course of the years/decades. So remember to eat your fruits, vegetables, fiber, and variety! That said, it's also VERY helpful to your overall health to be at a healthy bodyfat % for you (common sense), so combine a healthy bodyfat percentage with a healthy diet (mostly Whole Foods, lots of vegetables, etc) and at least 30 minutes of exercise a day on average, and you'll have a decent health insurance policy.
